Is honey a good substitute for sugar for a person with diabetes? Brennan J. Robertson's Response Not surprisingly, honey and sugar are very similar in the way they affect blood sugar levels. Both are examples of carbohydrate-containing food and while they can be eaten by people with diabetes, large amounts of either sweetener will raise blood sugar levels and cause potential problems for people with diabetes.
